Clean the hairtail, cut into sections and put into a clean basin.

Chop onions and ginger and set aside.

Put the onion and ginger into the fish, add cooking wine, very fresh soy sauce, salt and marinate for 30 minutes.

Dip the marinated fish in a layer of flour.

Dip in another layer of egg wash.

Heat the oil in the pan, add the hairtail fish and fry over low heat.

Fry until both sides are golden brown.
