The main materials are ready;

Slice garlic cloves and ginger, peel and cut carrots, shred peppers, and cut coriander into sections;

After cutting the duck meat into pieces, boil it in a pot of cold water, blanch it, take it out, drain and set aside;

Pour a little oil into the pot and heat up, add the duck meat and stir-fry in the oil. During this period, add cooking wine and a large spoonful of Pixian bean paste and stir-fry until the duck skin is crispy, then set aside;

Heat oil in a wok, add garlic slices, ginger slices, and half of the shredded chili peppers and stir-fry, then add peppercorns, star anise, grass fruits, cinnamon bark, tangerine peel, and bay leaves and stir-fry;

Then add the stir-fried duck meat and stir-fry over high heat until evenly distributed;

Then pour an appropriate amount of water, add a few rock sugar, cover and simmer over high heat for about 20 minutes;

After simmering, open the lid and add the carrots, cover and simmer for another 5-8 minutes;

After simmering, open the lid, add the remaining shredded peppers, stir-fry, and season with a little salt. When the soup is almost dry, sprinkle with coriander and stir evenly before serving.
