Highland Barley Dietary Fiber Biscuits
Overview
Recently, I especially like to eat Qing Keer’s dietary fiber biscuits, and I suddenly thought if I could make them myself? So I looked at the ingredient list, added my own creativity, and finally made this biscuit. My husband said it tasted better than the ones I bought, haha... I'll take it seriously.

After the butter is softened, add brown sugar, white sugar, and salt, and mix well with a whisk without beating.

Add the egg yolk in batches, and use a whisk to mix it with the butter each time before adding the second time to avoid separation of oil and water.

Slowly add the milk, stirring carefully while adding to avoid separation of oil and water.

Mix and sift various flours and add them. Highland barley flour is the key. The biscuits made will have a unique aroma of highland barley. (Oat flour and rice flour are obtained by crushing oatmeal and rice with a food processor). If corn flour or rice flour is not available, oat flour and wheat flour can be used instead.

Knead the dough with your hands. The dough does not look very smooth and is a bit ugly. This is the effect you want.

Add appropriate amount of black and white sesame seeds and continue kneading into a uniform dough.

Weigh 10g of small dough, roll it into a round shape and flatten it, then bake it in a preheated oven at 170°C for about 15 minutes.
