Steps
-
Mix 250 grams of flour and 2.5 grams of yeast powder, add purple sweet potato puree, knead with your hands while adding, try to knead evenly, add 60 grams of warm water, and knead into a smooth purple sweet potato dough.
-
Mix 250 grams of flour and 2.5 grams of yeast powder, add pumpkin puree, and knead it with your hands while adding it, and knead it into a smooth pumpkin dough.
-
After the two colors of dough are kneaded, cover with a lid or plastic wrap and leave to ferment in a warm place until doubled in size.
-
Dip your index finger in flour and poke a hole in the middle. If the hole does not collapse or shrink back, or you can see that the inside of the dough has formed a honeycomb shape, it is ready to ferment.
-
Knead the fermented dough evenly until the surface is smooth and there are no obvious bubbles on the cut surface of the dough.
-
Divide the dough into small even portions, take one portion, flatten it, use a rolling pin to roll it into a dough, wrap it in the filling, seal it, and wrap it into a round shape.
-
Knead the dough until it is tapered at both ends and slightly thicker in the middle.
-
Fold the tail upward, press it gently with your hands, cut it off in the middle with a knife, and stamp it with a pattern.
-
Use scissors to make a slit on the head and use a small spoon to press out the lips.
-
Use a small piping die to stamp the front of the fish head, garnish with red (black) beans, and make fish eyes.
-
Using a small spoon, starting from the tail, press patterns to make fish scales.
-
Pinch out a small strip on the back of the fish and use a clean comb to press out the dorsal fin.
-
Cut one side fin on one side of the fish body, cut three fins on the other side, and stuff the jujube shreds into the fish's mouth.
-
Complete the two colors of fish one by one, put them into the steamer, and let them rise for 20 minutes. Bring the water to a boil over high heat, steam over medium heat for 15-20 minutes, turn off the heat, and then uncover the pot after simmering for 5 minutes.
