Add flour, starch, baking powder and water to make a thick paste (when scooped up and poured into a basin, it will form a straight line); salt, oyster sauce, rice vinegar, aged vinegar, white sugar and pepper, make a sauce

Wash, peel and cut the eggplants into strips and put them into paste for later use

Heat a wide pan of oil until it is 40% hot, then fry the eggplant strips over medium heat for about 1 minute until mature

Remove the eggplant strips and raise the temperature to 60% hot

Add the eggplant strips and fry again until crispy

Leave the oil in the pot, sauté the onion, ginger, garlic and dried chili until fragrant

Add sauce

Simmer over low heat for 30 seconds until melted and thick

Add the eggplant strips and wrap them evenly
