Purple Sweet Potato, Rose Flower and Egg Omelette Dumplings

Roses are a symbol of love. Chinese Valentine's Day is approaching, so I would like to give you a pot of delicious purple rose fried dumplings.

Put the small purple potatoes into the air fryer or oven and bake them, or steam them in the whole pot. (I only used one or two, the others were used to make purple sweet potato cake)

Let the cooked purple potatoes cool and peel.

Put it in a food processor and add water to make a puree.

Add flour and stir with chopsticks until fluffy.

Form into a sanguang dough, cover it and let it rest for a while.

Add water to the meat filling and mix well.

Add chopped green onions.

Heat the cooking oil, pour it on the chopped green onion while it is hot, then add other seasonings and stir evenly.

Roll the dough into a long strip, pull it into a ball, roll it into a round shape and flatten it, and roll it into a skin (the skin must be thin, otherwise it will be too thick and thick when rolled out).

Take several dumpling wrappers and arrange them one by one. (It is recommended to use 4 to 5 dumpling wrappers to make a flower. I used six which was a bit too much. The roll was too thick and not cooked well)

Fill the middle of the dumpling skin with meat filling.

Fold it in half.

Roll up.

After rolling it up, it becomes a flower.

Heat the oil in a pan, arrange the rose dumplings and fry them briefly.

Then pour in water and cover more than half of the rose dumplings.

Cover and simmer until water dries up.

Beat two eggs.

Pour egg liquid into the pot.

Cover and simmer until the egg liquid solidifies.

Sprinkle with chopped green onion, wolfberry and sesame seeds (the wolfberry can be chopped a little or not).
