Breaking old tofu by hand
Overview
For this dish, you must break the old tofu with your hands, not cut it with a knife. The edges of the old tofu broken by hand are irregular, so that the surface area is larger and can come into contact with more seasonings, which makes it more delicious. Cutting with a knife is the opposite. Knives are generally made of metal and do not need to be cut with a knife. As the old saying goes, it avoids the smell of iron and helps maintain nutrition and taste. I prefer hand-broken old tofu.

Prepare materials.

Wash the tofu and steam it in a steamer for 5 minutes.

Let the steamed old tofu cool and break it into pieces with your hands for later use.

Cut chives into sections.

Mix steamed fish with soy sauce, salt, sugar, sesame oil and mature vinegar into juice and set aside.

Put oil in the wok over low heat and sauté the Sichuan peppercorns and chilies until fragrant.

Put chives and small peppers on top of the broken old tofu.

Pour the peppercorn oil from step 6 on top and pour the bowl juice from step 5.
