Steps
-
Soak the onion, ginger, and peppercorns in water for later use. Chop the beef into meat cubes, add the onion, ginger, peppercorns, water, salt, sugar, dark soy sauce, and eggs. Stir vigorously in one direction. Sprinkle in chopped green onion and coriander, and finally pour in edible oil to seal the flavor and lock in moisture.
-
Dissolve the yeast in a small amount of warm water and let it sit for 3 minutes. Put the flour in a large basin, pour the yeast water, and then pour the remaining warm water. Use chopsticks to stir it into snow flakes, then knead it into a smooth dough with your hands, cover it with plastic wrap, and let it ferment in a warm room until it is about 2.5 times in size.
-
Knead the fermented dough evenly and deflate it, divide it into small pieces, and roll it into a round shape with a rolling pin.
-
Put the meat filling in the middle and wrap it up.
-
Wrap it up, seal it downwards, dip it in sesame seeds, and let it rest for about 15 minutes.
-
In a frying pan, add no oil or a small amount of oil, and put the risen dough into the pan. Cover the pot and sear over low heat until one side is lightly browned, then flip over and sear the other side until it is lightly browned.
