After cleaning the ribs, add ginger, pepper and aniseed ingredients and cook for 30 minutes. Add salt 10 minutes before serving. Cook the pork ribs for 30 minutes until the pork ribs taste slightly chewy. If you like it chewy, 30 minutes is enough. If you like it softer, cook it longer.

Remove the cooked pork ribs, drain and let cool. Then add light soy sauce and cooking wine to the ribs and marinate for a while.

Strain the soup in which the pork ribs are cooked and don't throw it away. Spare ribs soup can be used to cook noodles or make stock.

Put more vegetable oil in the pot, put the ribs in the marinated pot and fry for 3-5 minutes. Frying the meat will make it taste better.

Prepare a bowl of sauce according to the formula of 1 spoon of cooking wine, 2 spoons of soy sauce, 3 spoons of sugar, 4 spoons of vinegar and 5 spoons of water. The spoon is as shown in the picture, it is a normal spoon used for eating.
