For tenderloin, be sure to remove the fascia.

Cut into slices about slightly thicker than a coin and wash them.

Pour cold water into the pot, add bay leaves, star anise, peppercorns, ginger slices, and a spoonful of cooking wine.

After the water boils, skim off the foam and cook the meat slices for 5 minutes.

Rinse away any foam stuck to the meat slices.

Drain.

Use a meat mallet to pound the meat slices until each piece of meat is very thin. If you don't have a meat mallet, use a rolling pin to pound it.

Then tear into small pieces.

Put the minced meat into a bread machine, add a little salt, fine sugar, pepper, light soy sauce and a little dark soy sauce.

Press the meat floss button on the menu of the bread machine. My bread machine takes 1 hour and 10 minutes to make meat floss. Press the button and forget about it.

Set an alarm for 50 minutes (there are still 20 minutes before the completion of the operation). Open the lid, sprinkle some black sesame seeds and white sesame seeds in, close the lid and continue the operation.

When you hear the notification that the operation is over, you open the lid and you'll be greeted by a fragrant smell of meat floss.

Pour onto a large plate and let cool.
