Steps
-
Ingredients preparation: Cut the sour bamboo shoots into thin slices, wash and smash the ginger, and cut the fresh millet pepper into two sections. If you have the conditions, you can buy a whole live goose in the market and cook it. If you can't buy a goose, it will be just as delicious cooked with duck.
-
Pour the cut goose meat into the pot and fry until the water is dry.
-
There will be some sticking to the pan after drying out the water, but there is no need to rush out of the pan.
-
Fry until all the fat on the goose skin is removed, and the goose meat is golden and non-stick.
-
Add the chopped sour bamboo shoots, spices, and peppers to the pot, add a little cooking oil and continue to stir-fry.
-
When you smell the aroma, add soy sauce and salt and stir-fry twice, then pour in the beer. The beer can cover the goose meat (because I cooked a whole goose and the portion was large, so I used three bottles of beer),
-
Add garlic sprouts and simmer together.
-
After simmering over medium-high heat for 5 minutes, turn to low-medium heat and simmer until only a little soup remains. The whole process takes about 30 to 50 minutes.
-
After simmering until the flavor is absorbed, add oyster sauce for color and freshness, then remove from the pan and place on the plate.
