Oatmeal Shortbread
Overview
My son is in his third year of high school, and every night when he comes back from self-study, he has to do a few more questions before going to bed. I would still be a little hungry if I didn't eat something when I came back. I was worried that he wouldn't sleep well if he ate too much, so I baked this crispy cookie for him with oatmeal. When I came back, I had a glass of milk and two oatmeal cookies. Oats are rich in dietary fiber, which can create a feeling of fullness without increasing the burden on the gastrointestinal tract.
