Braised beef ribs with dried cowpeas and carrots

This dish has been my favorite winter dish since I was a child. Whenever winter comes, my mother loves to make this dish. Every year from July to August, cowpeas and lentils are on the market in large quantities. My mother will always buy some and blanch them in water. Whenever my sister and I see our mother blanch the water, we will take out the old sheets and spread them on the ground at the door, and then spread the cowpeas and lentils on top one by one. It is very hot at that time, and the cowpeas and lentils will be dried out in about two days. My sister and I wrapped them in old sheets and carried them back together. In fact, the dried cowpeas were not heavy, but at that time we wanted to carry them back together. Now that I think about it, I just wanted to get praise from my mother and prove that I also helped her with the work. After I started my own family, I would dry out some dried cowpeas, dried lentils, etc. every year. In winter, I would stew beef and beef ribs. Now it has become my family’s home-cooked dish in winter. Nutritional value of beef ribs: It is a food suitable for obese people. Every 100 grams of beef ribs contains more than 20 grams of protein. The protein of beef ribs contains more essential amino acids and has lower fat and cholesterol. Therefore, it is especially suitable for obese people and patients with hypertension, arteriosclerosis, coronary heart disease and diabetes to eat in moderation.
