Wash the lotus root and peel off the skin

Wash and drain the peppers.

Stuff the pepper into the hole of the lotus root

Add water, pepper, salt and green onions to a boil and let cool.

Pour into a bowl with lotus root slices, cover and seal with plastic wrap, store in a cool place for one day, then refrigerate after one day.
