Dumplings stuffed with chives and eggs

The children really wanted to eat dumplings, and I happened to have leeks at home, so I prepared the ingredients to make dumplings so that the children could have a feast!

First, wash the leeks and put them in a basket to dry the water. If they are not dried, there may be too much water.

While the leeks are drying, knead the cotton together. Put an appropriate amount of flour in a basin, pour in an appropriate amount of water, stir the flour into dough, and slowly knead the dough into a smooth dough. In summer, the dough should be slightly harder, so that it is easy to wrap. After mixing, cover with plastic wrap and let it rise for half an hour.

Put a small handful of vermicelli into the hot oil and fry until it expands. You don’t need too much vermicelli, because it will be a lot more when it expands. This needs to be crushed and stirred into the dumpling filling, because the leeks will make soup. If you don’t put the vermicelli, it will be difficult to wrap. The vermicelli must be crushed.

Crush the scrambled eggs. Heat the oil and pour the beaten egg liquid into the pot. Keep stirring the egg liquid with chopsticks while pouring. This way, the scrambled eggs will be very broken and there is no need to chop them again.

Chop the dried leeks, not too big, and pour them into the scrambled eggs together with the crushed vermicelli. Before adding salt, pour some oil into the stuffing and mix well to prevent the leeks from coming out with less soup. Finally, add an appropriate amount of salt, brown sugar, chicken essence, aniseed powder, and sesame oil and stir evenly.

Take out the risen noodles and knead them smooth, then divide them into several portions of suitable sizes.

Then roll the divided ingredients into long and uniform strips, cut into uniform small pieces, and then roll them into dumpling wrappers.
