Boiled pork slices
Overview
I like spicy food very much. In the past two years, my baby has been afraid to eat chili peppers. I finally weaned my baby a few days ago and can finally eat chili peppers. It’s so enjoyable

Ingredients
Steps
-
Prepare a piece of tenderloin and cut into slices, as large as possible
-
Add less salt, light soy sauce, cooking wine, egg white, and sweet potato starch to the meat slices (starch is also acceptable) and marinate
-
Mix the added seasonings evenly
-
Start preparing ingredients and seasonings, chop green onions and slice ginger
-
Cut the dried chili peppers with scissors and prepare a handful of Sichuan peppercorns
-
Thousand pieces shredded, duck blood sliced
-
Wash the soybean sprouts and lettuce and set aside. I went there late today and the bean sprouts were not good and the tails were too long, but I bought them because I like them
-
Put a pot of water, wait for the water to boil, add the lettuce and blanch it
-
Blanch the soybean sprouts, thousand pieces of silk, and duck blood in order
-
Place the blanched vegetables on the bottom of the basin and set aside
-
Put a little oil in the wok, when it is 60% hot, add onion, ginger and garlic
-
After the onions and ginger are fragrant, add the bean paste and stir-fry briefly
-
The spicy fish seasoning has been bought for a long time and there is no outer packaging
-
Add a little spicy fish seasoning and fry briefly
-
When you smell the aroma, you can add boiling water to the pot, and then add a little light soy sauce and cooking wine. Because my bean paste is a bit salty, I didn't add salt. You can adjust it to your own taste. The amount of water should be determined based on the amount of side dishes you have. Just enough to cover the dishes, not too much
-
After the pot boils, put the meat slices into the pot one by one
-
Simmer the meat slices for 3-5 minutes and then pour the meat slices and soup into a basin
-
Next, sauté the Sichuan peppercorns and chili peppers until fragrant. Put a little oil in the pot. When the oil is not too hot, put the chili peppers and Sichuan peppercorns in it. If it is too hot, it will easily burn. This is a rule of thumb! When the oil is hot, just pour it into the basin until you can hear the sizzling sound. I don’t like a lot of peppercorns when eating, so I fish out part of it before pouring it, which causes the rest to burn, but it doesn’t affect the taste! Hehe
