Purple ginger is also called Zijiang, which is actually named after the purple tip of ginger. I like to eat pork belly, but the pork belly is too fatty. I happened to have pickled Dongshan purple ginger at home, so I used it with the pork belly. It tasted really good. The pork belly was not greasy and full of the aroma of sour purple ginger, and it also went well with rice.
