  1. Wash the fish, beat it with a knife, and pat it with a thin layer of flour. After cutting the fish, I marinated it with cooking wine, onions, ginger, pepper and salt for a while, then washed the fish and pounded it into flour.

  4. Put all the onions, ginger, Sichuan peppercorns, anise, bay leaves and chilies into the pot and let out the aroma

  8. Add appropriate amount of water, salt, sugar, and simmer over medium heat. Remember to turn it after stewing for a while. The fish is very thick, so both sides need to be simmered for a while
