Steak with black pepper sauce

Cut the steak into pieces of about the same thickness, pound both sides with the back of a knife, then mix with shredded ginger, light soy sauce, oyster sauce, white pepper, and red wine and marinate for half an hour. (You can skip marinating if you don’t have time)

Peel the carrots and cut into rounds.

Soak the rapeseed in salt water and wash it.

When marinating beef, boil water, add a little vegetable oil and salt, add carrots and cook for one minute.

Add the rapeseed and blanch (about one minute), drain and set aside.

Pour vegetable oil into the pan and heat it up (it will smoke slightly), turn down the heat, quickly add the steak and fry for about ten seconds (this is to lock in the moisture of the beef)

Turn over and fry over high heat for thirty seconds.

Flip again and cook for 30 seconds to remove the steak.

Put the marinated steak sauce and black pepper juice into the pot and bring to a boil, then pour it into the steaks on the plate.
