  1. Have all materials ready

  2. Spread the eggs and cut them into strips

  3. Cut the carrots into shreds and blanch them in boiling water

  4. Cut the cabbage into strips (use the heart part of the cabbage)

  5. Rice and purple rice are steamed in a ratio of 4:1

  6. Prepare the sushi vinegar at a ratio of 3:2:1 of vinegar, sugar and salt (warm the vinegar to prevent the salt from melting), pour the sushi vinegar into the rice and mix well

  7. If you don’t have a sushi curtain, you can use a magazine, cover it with plastic wrap or a plastic bag, and put sushi skin on top

  8. Spread the rice evenly on the sushi wrapper

  9. Apply salad dressing

  10. Put the cabbage, carrots and eggs on top

  11. Then roll it up

  12. Dip a kitchen knife in some water and cut it open. You're done!
