Once baked, it’s as deep as the sea—unusual home-cooked vegetable tortillas
Overview
Today I’m making vegetable tortillas. I know the list of ingredients looks long (it’s like a sea of ingredients once you bake them), but I promise it’s really simple to make. I make a vegetarian combo, if you really want to make beef, chicken or pork just swap out the meat you like, potatoes and you're good to go...or just throw it all together!

Mince the garlic, chop the onion, and peel and dice the sweet potato. Heat the pan, add the olive oil, and add the onions and minced garlic.

Add the sweet potatoes and continue cooking until evenly stir-fried.

Dice the green pepper, wash and cook the red beans.

Add green peppers, red beans and salsa and stir-fry evenly.

Add chili powder, cumin and salt to taste.

Preheat oven to 425 degrees. Place the flour, cornmeal, sugar, salt and baking powder in a large bowl and mix well.

Then add milk, eggs, vegetable oil, Ricos cheese sauce and chopped cilantro leaves and mix well.

Pour vegetables into baking dish.

Pour over cornmeal mixture and smooth.

Place in the oven for about 25 minutes, until the top is golden brown.

Take out and cut into pieces. You can enjoy it.
