Rich Lantern Shrimp

Overview

During the Chinese New Year, I made a very simple and very delicious lantern shrimp dish. It was actually just ordinary boiled shrimps, but I changed the presentation method and made the shrimps look like lanterns. The shrimp meat is elastic and tender, and paired with yam paste, it is rich in nutrients and low in fat. When you have guests at home during the holidays, you can make this dish of rich lantern shrimps, which is zero-difficulty, looks good, looks good and delicious, and will definitely give you face.

  1. First of all, we need to prepare all the ingredients needed to make this rich lantern shrimp: 21 shrimps, one yam, 20g corn kernels, 20g peas, carrots, 10g wolfberry, 1 piece of seaweed, 10g green onions, and 10g ginger.

  2. First clean the skin of the yam and cut it into sections with a knife. Put it on a plate and steam it in a pot. Take it out, let it cool, peel off the skin of the yam, put it in a bowl and use a mud press to press it into yam puree and set aside.

  3. Clean the shrimps and cut off their whiskers. Add an appropriate amount of water to the pot and bring to a boil over high heat. Add corn kernels and peas until cooked and remove. Add the green onion and ginger slices, pour in the cooking wine, pour the shrimp into the pot and cook, remove and set aside.

Add peas, salt and black pepper to the yam paste, then squeeze into the salad dressing according to your own taste, stir well and set aside; peel off the heads and shells of the cooked shrimps and take out the shrimp threads; cut a few semi-circular flower slices from carrots to make the lantern holders, and cut some thin carrot shreds to make the lantern spikes; soak the wolfberry in water until soft and set aside.

  5. Put on disposable gloves, put the mixed yam puree into the palm of your hand, form it into a semicircle, and put it on the plate. Then place the peeled shrimps on top of the yam puree in order according to their size.

  6. Then place the cut carrot flower slices close to the tail of the shrimp, and finally add shredded carrots to make lantern spikes, and the lantern shrimp is ready. Use scissors to cut the seaweed slices into thin strips, arrange them on the plate in the shape of branches, and then use corn kernels and wolfberries to shape flowers. Pour an appropriate amount of drinking water into the pot and bring to a boil, add light soy sauce and stir evenly, pour in water starch to thicken it into a thin gravy, and pour it on the arranged lantern shrimps.
