Peel the quail eggs after they are cooked, cut the pork belly into large pieces, pour water and an appropriate amount of cooking wine into the pot, put the meat in and cook until it changes color, take it out, rinse off the blood foam, and cut into small pieces for later use.

Put the pork belly into the pot and stir out the fat,

Add sugar and stir-fry over low heat until each piece of meat is colored, add star anise leaves, dried pepper and soy sauce and stir-fry.

Add enough boiling water at a time to bring to a boil, then reduce the heat to medium-low and continue to cook for 20 minutes.

Add the quail eggs and salt and continue.

Cook until the meat is rotten, the eggs are fragrant and the juice is reduced, add pepper and chives.
