Sautéed Fatty Sausage
Overview
I love and hate the sausage. I love its delicious taste and hate its smell. The sausage I just bought has a lot of dirt in it, and the smell is strong, which often scares me away. Moreover, if the sausage is not cleaned, I cannot make delicious sausage dishes. So when I want to eat the sausage, I will buy some and take it home and ask my mother to help me process it. These sausages are sent to me after my mother cleans them. There is a lot of fat in the sausage. When we were young, my mother would refine the fat out of the sausage when she cooked it for us. The resulting sausage was not greasy at all. Today, I followed this method and cooked the sausage. It was delicious and not greasy.

Cut the processed sausage into small pieces.

Put the cut sausage into a wok to extract some of the fat, cook until the sausage is slightly yellow, and then take it out.

Prepare ginger, garlic slices and chili segments, and two star anise.

Pour two bowls of water to boil, add ginger and garlic slices, chili noodles and star anise.

Add one spoonful of light soy sauce and one spoonful of dark soy sauce.

Add a large spoonful of Pixian bean paste and cook the sausage over low heat.

After the sausage is cooked, taste it and add an appropriate amount of salt and a small amount of chicken essence to taste, then add chopped green garlic and coriander and blanch until cooked, then turn off the heat and eat.
