  1. Step 1: Prepare a container, stir and marinate the minced meat, salt, light soy sauce, eggs, pepper powder, oyster sauce, and sugar. Then crush the old tofu in the bag so that you don’t have direct contact with the tofu with your hands.

  2. Step 2: Combine the crushed old tofu, ginger, chopped green onion, sweet potato powder, Sichuan pepper powder, pepper, oyster sauce, and sugar.

  4. Step 4: The most critical step is to wash your hands in advance, use a spoon to take a spoonful of stuffing, and continue to spread (beat) it into a round shape with the other hand. This will be a bit difficult at first, but it will become easier once you become proficient.

  5. Step 5: The amount of stuffing you scoop out determines the size of the tofu balls. It is best if they are all the same. In this way, the balls will be the same size, and the heat will be easy to control and beautiful.

  6. Step 6: When rolling the meatballs, prepare a frying pan with hot oil and cold oil. After making a meatball, you can fry it to test the taste. If the taste is not right, you can adjust it in advance.

  7. Step 7: When frying for the first time, pay attention to the heat. It is best to fry over medium to small fire. After frying, fry them all again over high heat for a minute or two. Charred on the outside, tender and golden on the inside. It can be eaten directly, or you can put a few in green vegetable soup.
