Chestnut and water chestnut chicken soup
Overview
Although it is already the winter solstice, the weather here is still crisp and clear in autumn, so it is not advisable to take a large amount of tonic. It is more suitable to nourish yin, moisturize dryness, and tonify the body with soups. In autumn and winter, we like to make soup with chestnuts, paired with chicken soup made with water chestnuts and corn. The soup is sweet and delicious.

Prepare the ingredients

Chop the chicken into pieces and blanch them in water for later use

Peel the water chestnuts and cut into half

Peel and cut carrots into cubes; cut corn into cubes

Add 2000ml of water and a little white wine to the pot, add chicken pieces and ginger slices, bring to a boil and skim off the foam and oil

Add carrots, corn and chestnuts, bring to a boil, then reduce heat and simmer for 1 hour

Just add salt to taste at the end.
