Olive oil bread
Overview
Olive oil is directly cold-pressed from fresh olive fruits without heating or chemical treatment, retaining its natural nutrients. Olive oil is considered to be the most suitable oil for human nutrition among the oils discovered so far. However, because it is slightly expensive, ordinary people do not use it often.

Prepare old dough: bread flour, yeast powder.

Mix the yeast powder and water evenly, pour in the bread flour, stir evenly, cover with plastic wrap, and put it in the refrigerator to ferment for about 10 hours.

Prepare the main dough ingredients: old dough, olive oil, eggs (leave a little for brushing the bread crust), sugar, salt, milk powder, and bread flour.
-
Mix the old dough, bread flour, eggs, salt, sugar, and milk powder together and knead until smooth.

Add olive oil and knead the dough again. Knead the olive oil completely into the dough. The dough becomes smooth and the dough reaches the expansion stage.

Cover with plastic wrap and let it grow naturally.

After 3 or 4 hours of proofing, when the dough has doubled in size, take it out and deflate it.

Divide evenly into 6 small dough balls. Cover with plastic wrap and let rest for 10 minutes.
-
Take a piece of dough and roll it into an oval shape.
-
Roll up along the long side and press to release air bubbles at any time.
-
Knead the dough into a long strip, as long or short as you like.
-
Press the dough into triangles one by one and put it in the oven for fermentation. To ensure the humidity, you need to put a bowl of hot water in the oven.
-
After the bread dough has risen, brush it with egg wash and preheat the oven to 180 degrees and 165 degrees. After preheating, place the bread dough in the oven for 16 minutes. When the surface is golden, take it out and let it cool.
