Mango Pudding
Overview
The summer heat is still warming up, so it’s a good time to eat something cool. I made mango pudding, which is actually a mousse type, but without the cake or biscuit base, it tastes the same.

Mango pulp

Place in a blender and puree

Pour into a basin

Add lemon juice and mix well

Soak the gelatine sheets until soft and take them out

Add powdered sugar to milk, mix well, heat over low heat until warm

Add the gelatine sheets, turn off the heat and mix well

Pour into the mango puree and mix well and refrigerate

Whip the light cream until slightly thick

Mix both.

Pour into a cup, refrigerate for more than 30 minutes, garnish with diced mango, and continue to refrigerate for more than 3 hours
