Noodle crab
Overview
Noodle crab is a traditional specialty dish in the Jiangnan area. From swimming crabs to hairy crabs, the more you eat it, the more flavorful it becomes. Cut it in half and wrap it in batter and fry it in a pan. When stir-frying, pour the batter and stir well.

Wash swimming crabs

Remove the navel from the swimming crab, wash the back of the gills, cut each crab into 4 pieces, add white wine, mix well and marinate for a while

Add flour to water to make a batter, prepare chopped green onion, ginger slices and minced garlic

Coat the cut parts of the crab pieces evenly with batter

Pour oil into a hot pan and fry the batter-coated side until fragrant

Stir-fry until all the crabs change color and then remove

Pour off excess oil, add ginger and minced garlic and sauté until fragrant

Then return the crab to the pot and pour in the cooking wine

Add a little boiling water

Add light soy sauce, stir-fry evenly and then cook until the flavor is absorbed

Then add the remaining batter and stir-fry evenly
