Chop onions, ginger, garlic, and mushrooms and set aside. (Prepare an extra portion of onion, ginger and garlic)

Wash the pig's trotters and chop them into pieces, not too big. Put the pig's trotters in a pot under cold water, add onions, ginger and garlic, pour in an appropriate amount of white wine or cooking wine, boil the bleeding water, remove the floating powder, take out the pig's trotters and set aside. Don't pour the soup, keep it for later use.

Put a small amount of oil at the bottom of the pot and add five grains of rock sugar (white sugar can be used, five or six grains of rock sugar for one pig's trotter is enough. I put too much^_^, so I scooped some out after it was done).

Simmer over low heat until the rock sugar melts into caramel color. It must be a small fire!

After the sugar is browned, add the cooked pig's trotters and stir-fry until evenly colored.

Pour in the previous soup until it covers the pig's trotters, and then add an appropriate amount of chili pepper, peppercorns, salt, chicken essence, and white wine according to your own taste. After the water boils, turn to medium to low heat and simmer for an hour and a half. You can check it in the middle. If the soup is too short, you can add some boiling water. If you have a pressure cooker, you can just stew the pig's trotters.

Cut the potatoes into slightly larger pieces. Pour them through water twice to remove the starch. Soak them in water and wait for the pig's trotters.

After the pig's trotters are stewed, add the potato cubes and simmer for another fifteen minutes. After adding the potato pieces, taste for saltiness and add some salt according to your taste.
