Except for the butter, pour all the dough ingredients into the kneading basin. (Yeast should not be in direct contact with salt)

Add softened butter to the dough and continue kneading until a thin film can be formed by gently pulling up the dough. Then cover with plastic wrap and ferment in a warm place. Send until doubled in size and set aside.

Prepare the coconut filling. Melt butter over water and mix with powdered sugar. Add milk and stir evenly. Add beaten egg liquid in batches. Stir thoroughly after each addition and then add egg liquid until all is added and stir well.

Add grated coconut to the stirred milk and egg mixture, mix well, cover with plastic wrap and refrigerate until ready.

Press and deflate the fermented dough and roll it into a thin rectangular dough. (I didn’t roll it square enough.)

Take out the refrigerated coconut filling and spread it evenly on two-thirds of the dough, leaving one-third of the dough blank.

Fold the top third of the dough that is not filled with filling toward the middle, and then fold it toward the middle line to form a small rectangle.

Cut into even-width strips.

Take a long strip, pinch both ends, twist it a few times, and place it on a baking sheet lined with absorbent paper. Press both ends tightly with your hands to prevent loosening and deformation. Place them on the baking sheet one by one, leaving appropriate space in the middle.

Place it in the middle of the oven and let it ferment again (my oven has a fermentation function, but for friends who don't have a fermentation function, put hot water under the baking pan to promote fermentation, or turn the oven up and down to the minimum heat to assist fermentation). Let it double in size, take out the baking pan, and use a brush to brush a layer of egg liquid on the surface of the bread.

Place the baking sheet into the middle rack of the preheated oven, set the upper and lower heat to 150 degrees, and bake until the surface is golden brown and fragrant with coconut, then take it out of the oven.
