Saury with onions
Overview
There are some saury in the refrigerator. The meat of saury is thicker and there are not many bones. I like it very much. However, saury is rare here and can only be found in big supermarkets. I always buy a few more and store them in the refrigerator. When I want to eat, I can take them out, which is very convenient.

Wash and slice onions

Remove the gills and belly of the saury, wash and cut into sections, add some salt and marinate in cooking wine for 20 minutes

Skim off the marinade and sprinkle some starch

Heat oil in the pan, add saury

Fry both sides thoroughly, add onion, ginger and chili

Add cooking wine, sugar, fresh soy sauce, a little water, and cook over medium heat for 10 minutes.
