Wash the chicken leg and remove the bones. Score the chicken a few times without scratching the skin.

Cut a few slices of ginger, green onions, and about 10 peppercorns.

Prepare a basin of ice water. Add ice cubes or ice packs.

Boil water in a pot, add ginger, green onions and about ten peppercorns. After the water boils, add chicken, add cooking wine and a spoonful of salt, turn down the heat and simmer for about five minutes.

Chop some green onion and minced garlic, and cut Thai pepper into rings.

Put a spoonful of sesame paste in a small bowl, stir it with a little hot water, then add light soy sauce and mature vinegar and mix well, then add 1 tsp sugar, 11 tbsp sesame oil, a little sesame oil, and finally add minced green onion, minced garlic and Thai pepper.

When it can be pierced with chopsticks, take out the chicken and soak it in ice water for half a minute. This way the chicken skin has a crispy texture.

Cut the chicken into pieces and place them on a plate, and pour the prepared sauce over the chicken (I forgot to take a photo of this step). Heat a little oil in a pot. If you like spicy food, you can add peppercorns and dried chilies when the oil is cold and fry until fragrant. Finally, pour the hot oil over the chicken.
