Put oil in the pot, add the shrimp heads and fry over medium heat. Use a spatula to press the shrimp heads until the shrimp brain oil overflows and stir-fry into red oil. Add green onions and stir-fry until fragrant

Heat water and bring to boil. Pour out and use a slotted spoon to strain out the onion, ginger and shrimp heads

Crush the starch into pieces

Chop carrots

Put oil in the pot, stir-fry minced carrots over medium heat until cooked

In another pot, put oil in the pot, add crushed salted egg yolk, stir-fry over low heat until foamy

Pour in the shrimp brain juice from before

Add tofu and carrots and boil for 2 minutes, add salt and chicken essence

Remove from the pan, drizzle with sesame oil and serve on a plate
