Pumpkin and Sweet Potato Pancakes

Overview

Ordinary fried pumpkin cakes feel very unhealthy. This kind of cake tastes soft and steamed, and it is much less greasy. I make the bean paste myself because I think the bean paste bought from outside is sweet and tastes weird. The pumpkin stems on top can be replaced with wolfberry or other lime peels, or you can use cocoa powder or matcha powder, green tea powder, mixed with glutinous rice flour and rub it together and put it on. Pumpkin or sweet potato can be used, depending on personal taste. The filling can also be filled with chocolate, peanut butter, purple sweet potato puree, or anything else.

  1. Steam pumpkin/sweet potato in a pot over water

  2. Pound into puree

  3. Add glutinous rice flour, orange powder and white sugar according to the above proportions. The white sugar can be adjusted according to personal taste. If you have no experience in making this kind of food, just follow the ratio of the recipe I mentioned above (provided that your mashed potatoes don’t have a lot of water). If you have experience in making this kind of food, it’s very simple. As long as the ratio of glutinous rice flour and orange flour is about 15:4, if you find that the dough is too dry after kneading, continue to add in proportion,

  4. Knead it into a dough that is basically non-sticky.

  5. Then divide the dough into a small dough of about 25g, roll the bean paste into a round shape, and the volume is about a quarter of the dough. Wrap them up one by one

  6. Then use a toothpick to press out traces, making them slightly darker, otherwise they won't be obvious after steaming.

  7. Decorate the top with wolfberries or other suitable things as pumpkin stems.

  8. Steam over water for 10 minutes! The time must not be too long, otherwise it will expand and deform. Ten minutes according to my recipe is definitely enough! When steaming, place it on a wet drawer cloth or brush oil on the metal cage to prevent adhesion.

  9. After turning off the heat, put some cooking oil on your fingers and you can easily take them out without damaging the shape. Just eat it directly. If you want to let it cool before eating, just brush a thin layer of cooking oil on the surface.
