Minced Pork and Eggplant-Steamed Version
Overview
Steamed eggplant, steamed, torn and then stewed with minced meat. It is more nutritious than fried eggplant, and the taste is not as bad as fried eggplant. It is also very smooth and soft.

Cut the eggplant in half, put it in a pot and steam it over high heat for 6 minutes until chopsticks can pass through it.

Heat the pan with cold oil. When the oil is hot, stir-fry the minced meat until fragrant.

Add minced ginger and garlic and saute until fragrant.

Add the chili oil, oyster sauce, light soy sauce, salt, and rock sugar mixed with the seasoning sauce, bring to a boil and simmer for 2 minutes.

Pour the mixed water starch into the juice.

Pour it over the eggplant or simmer the eggplant together for more flavor.
