Cured Meat Claypot Rice
Overview
The Corning Pot version of claypot rice is quick and easy, healthy and delicious. It can be prepared in half an hour, and it’s lunch for the two of you and your daughter!

Soak the rice for 2 hours in advance.

Add two teaspoons of cooking oil to the soaked rice and mix well.

Add water at a ratio of 1:1 to rice (the rice has been soaked, so the amount of water added is less than usual cooking water).

Cover and bring to a boil over medium heat, then reduce heat to simmer.

While the rice is simmering, prepare the side dishes, wash the rapeseed and shred the ginger.

Slice sausage.

Boil the vegetables and set aside.

Take a bowl, add 2 teaspoons of light soy sauce, 1 teaspoon of oyster sauce, and 1/2 teaspoon of sugar and mix well to form a sauce.

When the rice in the pot is about 70% mature, add the sausages and beat in the eggs. (I left some meat fillings left over from making wontons for my daughter this morning and ignored them)

After adding the sausage, eggs and other ingredients, cover the lid and simmer over the lowest heat for 5 minutes, then turn off the heat and simmer for another 5 minutes.

Open the lid and pour on the prepared sauce while it's still hot.

Just mix well when eating.
