Stir-fried chicken with fungus, star anise and melon

Roll and cut the star anise melon into cubes. Soak the fungus and tear it into pieces by hand. Cut chicken into strips. Cut red pepper into slices.

Heat the pan, pour in the oil, wait for about 20 seconds, and then turn down the heat. Add ginger slices and a spoonful of bean paste and stir-fry until red oil emerges.

Add the chicken and stir-fry quickly until evenly coated.

Pour in the black fungus, adjust the heat to medium, stir-fry for a while, add light soy sauce, 100 rice wine, and half a spoon of sugar, and simmer for about 30 seconds.

Pour in the star anise melon and red pepper, add a little water, and simmer until the star anise melon becomes watery, about 1 minute.
