Preparation: Clean the green eggplants (very tender eggplants).

Put it into a pot of boiling water and steam over high heat for about 15 minutes.

Preparation: minced garlic, minced green pepper.

For the minced meat, add a small spoonful of Shacha sauce, pepper, salt and cornstarch water, stir well and set aside.

Steamed eggplant.

Use chopsticks to break up the eggplant as shown in the picture.

Heat oil in a pan, add minced meat and stir-fry over high heat. When it changes color, add minced garlic and green pepper and stir-fry until fragrant (warm reminder that the color is a bit lacking, adding a little soy sauce would be better).

Spread the fried minced meat sauce on the surface of the eggplant and garnish with coriander to make it more appetizing.
