Make two cuts on both sides of the pipa leg, add garlic slices, green onion segments, salt, sugar, white pepper, white wine, light soy sauce, braised soy sauce and oyster sauce.

Mix well and marinate for half an hour.

Add vegetable oil to the pot, add the Pipa legs and fry over low heat until both sides are golden brown.

Pour in the remaining sauce from the marinated chicken legs and the onion and garlic, add an appropriate amount of water and bring to a boil, then reduce to low heat and simmer for 15 to 20 minutes, then use high heat to reduce the juice.
