Prepare a handful of rice noodles and soak them in warm water for ten minutes.

Prepare and wash the accessories.

Cut the shallots into chopped green onions, cut the ham sausage into slices, cut the coriander into small sections, and tear the oyster mushrooms into small florets.

Take a small bowl and add salt, pepper, peppercorns, chicken essence, sesame oil, chili oil, light soy sauce and balsamic vinegar and mix well.

Boil water in a pot. When the water boils, use a spoon to scoop out a ladle of boiling water.

Pour into the mixed sauce and stir evenly.

Blanch the torn oyster mushrooms for one minute.

Then put the soaked rice noodles in and blanch for one minute, add the green vegetables and stir-fry for 30 seconds and drain into the sauce.
