Material preparation: The ratio of chili peppers; dry chili peppers: spicy millet: fresh red chili peppers is 3:2:1. Match other ingredients according to your own taste.

After the fish head is cut in half (not cut off), add green onion leaves, salt, ginger slices, and cooking wine to taste and marinate for 15 minutes.

Cut the dried chili peppers, spicy millet and fresh red chili peppers into tubes, cut the star anise and aniseed into pieces, slice the garlic, cut the ginger into rice grains and mix them evenly with the peppercorns. Add salt, sugar and MSG and marinate for 15 minutes.

Cut the tofu into cubes and blanch them in boiling water. Drain the water and put them on the fish head together with the chopped green onions. Sprinkle a spoonful of light soy sauce evenly on top.
