Remove the cover, gills, and wash the swimming crab, cut it in half and then into four pieces. Peel the sweet potato and cut it into 1.2X1.2 cm strips, 5-6 cm long.

Rinse the sweet potatoes and put them in a zip-keeping bag. Tie the bag tightly and poke 5 holes in the zip-keeping bag with a toothpick. Place it in the microwave for 2-3 minutes until the sweet potatoes are cooked and take it out for later use.

Put a few spoons of flour into the plate and coat the cut surface of the swimming crab evenly with flour.

Coat everything with flour and set aside.

Heat the oil in a hot pan, fry the swimming crabs on the cut side, add the sweet potatoes and stir-fry evenly, pour in the cooking wine, cover and simmer for a while, then add light soy sauce and 300 ml boiling water, cover and simmer for 2-3 minutes, add chicken essence, pepper and green onion and stir-fry evenly.
