Steps
-
Ingredients: 400 grams of enoki mushrooms, 100 grams of lean pork. Accessories: 10 grams of chopped green onion, 5 slices of ginger, 1 teaspoon of tempeh, 2 teaspoons of light soy sauce, 1 teaspoon of oyster sauce, 1/2 teaspoon of cooking wine, a little white pepper, 1/4 teaspoon of sugar, 1/2 teaspoon of starch, and 1 teaspoon of cooking oil.
-
Cut the pork into thin slices and put it into a bowl. Add chopped green onion, ginger slices, light soy sauce, oyster sauce, 1 teaspoon of tempeh, white pepper, a little sugar, and 1/2 teaspoon of cooking wine. Mix well and marinate for a few minutes to let the pork slices absorb the flavor. Try to choose lean meat, tenderloin or plum meat is best, as it will be more tender and smooth when steamed.
-
Add 1 teaspoon of starch to the marinated meat slices and mix well again, then add 1 teaspoon of cooking oil and mix well. When marinating pork, adding starch is to make the meat slices more tender. Adding a little cooking oil is to lock in the moisture in the meat slices, which can also achieve the tenderness effect. Friends who like it can try marinating the meat slices in this way. This pickling method is also suitable for stir-fried meat slices.
-
Cut off the older part of the root of the enoki mushroom, then tear it into small portions, wash and drain the water and set aside.
-
Put the dried enoki mushrooms into a deeper plate, and arrange the marinated and starched meat slices evenly on the enoki mushrooms one by one. Try not to overlap the meat slices. If the overlap is too thick, it will not be easily steamed.
-
Arrange the marinated meat slices and place them in the steamer. Steam the steamer over high heat for about 10 minutes and then turn off the heat.
-
Take it out and sprinkle some minced chives to enhance the color and flavor. You can also add a little hot cooking oil to the minced scallions to add flavor. Eat it at home. Less oil and less salt is healthier. Zerui’s mom didn’t add hot oil, but it’s still delicious~~
