Add chicken thighs to a pot of cold water, add green onion slices, ginger slices and cooking wine, bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes (reserve the chicken soup for later use)

Wash the cooked chicken legs with purified water to remove any blood foam, then soak in ice water for 15 minutes

Tear the refrigerated chicken legs into shreds and mix with millet, spicy coriander and peanuts. Take a spoonful of chicken soup and add other seasonings to make a dipping sauce. You can also pour it directly on the chicken and mix well (the same as the saliva chicken)
