Clean the Guizhou fish, stuff it with a few shredded gingers, and marinate it with cooking wine for 20 minutes.

Rinse off the cooking wine with a small amount of water, then absorb the water with kitchen paper towels, make a few cuts on both sides of the fish, apply an appropriate amount of salt and white pepper, wrap it with silicone paper and put it in the refrigerator to marinate for more than half an hour.

Use the gap between the pickled fish to prepare the auxiliary materials. First peel 5 large pieces of garlic (you can add as much garlic as possible to stir-fry the garlic aroma).

Chop the garlic into small particles (do not stir it into minced garlic, the granular form is more delicious).

Cut the green pepper, red pepper and millet into small pieces.

Wash and slice potatoes, lotus roots and onions.

Put oil in a pan, add a small amount of bean paste and stir-fry the vegetables.

Heat oil in a pan (put more oil), add garlic first, stir-fry garlic until fragrant, then add green pepper, red pepper, millet pepper, season with light soy sauce, oyster sauce and salt, stir-fry over medium heat for a while until fragrant.

Spread the fried ingredients evenly on the fish, covering the whole fish as much as possible, then wrap the fish tightly with silicone paper and put it in the oven. Preheat the oven in advance and bake it at 250 degrees for 20 minutes.

After grilling, sprinkle coriander and patchouli leaves on the surface, and the garlic grilled fish is complete! The garlic aroma is rich and the taste is no worse than the ones in other stores.
