Roasted pig trotters
Overview
We have a carnivorous beast in our family that loves all kinds of meat. Especially fried and grilled. Fried is unhealthy, try this roasted pig's feet that is salty and slightly spicy, crispy but not rotten, fat but not greasy, and slightly charred!

When buying pig's feet, ask the stall owner to chop them into pieces, wash them, and use pliers or fire to remove the hair. Pour cold water into a pot, add a few green onion slices, ginger slices, and 1 tablespoon of cooking wine, bring to a boil, remove and rinse.

Fry the sugar color: Put oil in the pot, heat over low heat, add rock sugar (the amount is based on your own taste, you can also use white sugar if you don’t have rock sugar), stir-fry until the sugar melts and turns brown-red. In this step, the oil temperature should be high, and the heat should be low throughout. Be careful not to burn it.

Add peppercorns, cinnamon, star anise, and dried red pepper, and stir-fry briefly. The time should not be too long as the syrup will burn.

Add the pig's feet and stir-fry until each piece of pig's feet is coated with syrup.

Pour in light soy sauce and dark soy sauce cooking wine, green onion and ginger, stir-fry until coloured.

Pour the pig's feet and soup into the electric pressure cooker, add water to cover the pig's feet, and cook for 70 minutes. My Pentium electric pressure cooker is not very easy to use. Please adjust the time according to your own pressure cooker, or use a rice cooker to cook until chopsticks can be easily inserted into the skin and flesh.

While the pig's feet are cooking, adjust the barbecue powder. This is the collection of ingredients. The yellow powder in the bag in the lower right corner is dried shrimps powder, which is made from dried dried shrimps and used as a substitute for MSG and chicken essence. There is no need to add it. It is not recommended to use MSG and chicken essence. MSG and chicken essence are prone to chemical reactions at high temperatures to produce toxic substances.

Take 1/2 teaspoon each of all the powders in the picture shown in the previous step and mix well. You can add more of whatever you like, and you can also add other ingredients such as chili powder according to your own taste.

Remove the pork trotters with the skin facing up, and sift the prepared barbecue powder through a mesh sieve to cover the skin.
