Overview

During the Spring Festival at my mother-in-law's house in Northeast China, we eat noodles every year on the seventh day of the Lunar New Year, because my mother-in-law says it is a human day. On the seventh day of the Lunar New Year this year, I made strips of brown wheat flour. I have made strips many times, but this is the first time I have used brown wheat flour. I never thought that the texture made from less delicate brown wheat flour would be smooth and chewy, and very delicious!

  1. Prepare noodle ingredients

  2. Add water and eggs to the flour and knead into a ball in one direction, cover with plastic wrap and let stand for 15 minutes

  3. Knead for the second time until basically smooth, cover with plastic wrap and let stand for 15 minutes

  4. Knead for the third time until the dough is smooth and let rest for 15 minutes

  5. Grease the cutting board and the surface of the dough

  6. Cut the dough into 5 strips

  7. Tear each strip into a plate, cover with plastic wrap and let stand for 10 minutes

  8. Take out the rested dough and knead it into a round noodle the size of your index finger while stretching it

  9. Place the noodles on a greased plate, cover with plastic wrap and refrigerate until ready to eat

  11. Pour an appropriate amount of oil into the pot, add minced ginger and peppercorns and sauté until fragrant, add onions and stir-fry until translucent

  12. Add green peppers and stir-fry tomatoes until soft

  13. Add mutton slices and stir-fry until color changes, add star anise cinnamon powder
