【Xinjiang】Tiaozi
Overview
During the Spring Festival at my mother-in-law's house in Northeast China, we eat noodles every year on the seventh day of the Lunar New Year, because my mother-in-law says it is a human day. On the seventh day of the Lunar New Year this year, I made strips of brown wheat flour. I have made strips many times, but this is the first time I have used brown wheat flour. I never thought that the texture made from less delicate brown wheat flour would be smooth and chewy, and very delicious!

Prepare noodle ingredients

Add water and eggs to the flour and knead into a ball in one direction, cover with plastic wrap and let stand for 15 minutes

Knead for the second time until basically smooth, cover with plastic wrap and let stand for 15 minutes

Knead for the third time until the dough is smooth and let rest for 15 minutes

Grease the cutting board and the surface of the dough

Cut the dough into 5 strips

Tear each strip into a plate, cover with plastic wrap and let stand for 10 minutes

Take out the rested dough and knead it into a round noodle the size of your index finger while stretching it

Place the noodles on a greased plate, cover with plastic wrap and refrigerate until ready to eat

After pulling the strips and placing them in the refrigerator, you can prepare various dishes

Pour an appropriate amount of oil into the pot, add minced ginger and peppercorns and sauté until fragrant, add onions and stir-fry until translucent

Add green peppers and stir-fry tomatoes until soft

Add mutton slices and stir-fry until color changes, add star anise cinnamon powder

Add appropriate amount of boiling water to boil, add salt and light soy sauce, sprinkle with black pepper and mix well

When eating, hold the noodles in your hands like a curly thread, and shake the noodles up and down on the chopping board a few times to make the noodles thin again

Cook it in a pot and pull it into strips

After cooking, rinse the strips in cold water and set aside

Take out the pulled strips after cooling and put them on a plate. Add the stir-fried vegetables to the pulled strips and mix well. You're done! Let's eat!
