Bean paste sandwich biscuits, yes, you read that right~ This biscuit is a sudden idea, because most of the sandwich biscuits are filled with chocolate or the like, but after looking online and looking at other masters’ recipes, the chocolate sandwich requires a whisk when making it. To be honest, I don’t have a whisk yet. . . So I thought of bean paste. Because the consistency and color are very similar to chocolate, I just used bean paste. I didn’t expect that such a combination of Chinese and Western would be pretty good! There is not too much sweetness and sugar like chocolate, only the fragrance of the beans in the bean paste. It is a good choice for afternoon tea~

Cut butter into small pieces and soften at room temperature.

Beat the butter slightly with chopsticks. (This step is very tiring. If you have an electric egg beater, just use that and beat until it becomes fluffy and feathery. I really don’t have an egg beater, so I just rely on my strength, and the beat is not very smooth.)

Pour the egg liquid into the butter in three batches and continue to beat.

Sift in cake flour and powdered sugar.

Just knead the dough until there is no dry flour. There is no need to knead the dough excessively. Refrigerate the kneaded dough for 30 minutes.

Take out the refrigerated dough and roll it into a 0.3cm piece.

Use a mold to carve out the shape. You can also just cut it into chunks without carving the shape.

Prick some little holes with a fork. You can cross it as you like, and my inner appearance association has come into play again.

Preheat the oven, place the baking pan on the middle shelf, and heat up and down to 160 degrees and 150 degrees for about 15 minutes.

The baked cookies are simmered in the oven for a while before taking them out. As you can see, the biscuits at my temperature are not heavily colored.
