Braised Beef Ribs with Hericium Mushrooms
Overview
Hericium mushrooms originating from the Northeast are of very good quality. The nutrient-rich Hericium erinaceus with many health benefits is paired with beef with the same benefits and many health benefits. The dish cooked slowly over low heat is not only delicious but also has many therapeutic benefits. It is a seasonal delicacy.

Soak Hericium erinaceus in water below 30 degrees Celsius, and change the water regularly during soaking

Soak the beef ribs in cold water, changing the water regularly

Soak Hericium erinaceus until slightly soft, tear into small florets and continue soaking, changing water regularly

Blanch the beef ribs in a pot and drain the water

Put the soaked Hericium mushrooms into the cooking pot for 10 minutes, then remove and drain the water

Heat the oil in a pan, stir-fry onion, ginger, aniseed, bay leaves, cumin, rock sugar, and dried chili

Stir-fry evenly, add hot water to cover the beef ribs, cover the pot, and bring to a boil over high heat

Put Hericium mushrooms into the pot and simmer together, then turn the pot back to low heat and simmer, stirring regularly

Wash the carrots and cut into hob pieces

Simmer until the water is almost the same as the Hericium beef ribs, add the carrots into the pot and continue to simmer
